Roasted Kohlrabi and Gourmet Cooking Onion Soup

Roasting the kohlrabi and onions develops the nutty, caramelized flavors that make this blended soup special!

Ingredients
2 French Bistro™ Gourmet Cooking Onions, sliced into 1/4” rings
2 pounds kohlrabi, peeled and chopped into 1-inch cubes
2 tablespoons olive oil
2 tablespoons butter
2 cups vegetable stock
2 tablespoons half and half
Salt and pepper to taste
Toppings for serving:
Parmesan cheese, grated
Fried Gourmet Cooking Onion Rings (see recipe below)
Directions
Roast the kohlrabi and onions. Heat oven to 350° F. Line a medium baking sheet with parchment paper. In a medium bowl, mix chopped kohlrabi, onion rings, and olive oil . Spread mixture onto the parchment and bake, checking often and stirring occasionally, until kohlrabi is roasted (about 30 minutes). Remove from oven and set aside.
In a large pot with lid, melt the butter over medium heat. Add the kohlrabi and onion mixture. Add the vegetable stock and bring to a boil. Cover, reduce heat to low and simmer for 25 minutes. Let cool a few minutes. Using an immersion blender or conventional blender (use caution when blending hot ingredients), puree soup until smooth. Season to taste with salt and pepper. Serve with a sprinkle of grated Parmesan cheese and a few onion rings and a hearty bread toast.
Fried Gourmet Cooking Onion Rings
Ingredients
French Bistro™ Gourmet Cooking Onions, peeled and sliced with knife or mandoline
flour
canola or safflower oil
salt
Directions
Heat one inch of oil in a small skillet over medium heat. Separate the onion slices into rings and place them in a medium bowl. Sprinkle flour over them and toss lightly to coat evenly. Working with a small quantity, sprinkle the slices over the oil and stir gently to keep them separated. Fry until golden brown. Remove and place on paper towels to drain. Sprinkle with salt and serve.
