Roasted Gourmet Cooking Onions with Olives & Balsamic Vinegar

These sticky gourmet onions are delicious with a roasted cauliflower-potato mash and your favorite sausages!
Serves 4 • Prep: 20 mins • Cook: 35 mins
Ingredients
1 lb French Bistro™ Gourmet Cooking Onions
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1/4 teaspoon dried tarragon (or herb of choice)
Kosher salt and fresh ground black pepper to taste
Handful of black or Kalamata olives
Directions
Preheat oven to 400 degrees F. Peel the onions and cut them in half lengthwise. In a shallow oven-proof dish, combine onions and all other ingredients except olives. Mix well. Bake, uncovered, for 30-35 minutes, stirring halfway through and adding the olives.
