Colcannon

Colcannon is a classic Irish dish that brings mashed potatoes to a whole new level with flavorful onions and nutritious cabbage. Our version features potatoes, shallots and tender leaf cabbage. These mashed potatoes are the perfect way to add more nutritious veggies to your meal! Warm and fluffy, with plenty of butter, they’re pure comfort food!

If you’re really feeling decadent, serve the colcannon with fried shallot rings and/or a pat of butter on top. The butter will melt into the hot potatoes. That’s the Irish way to serve colcannon!

Serves 6

Ingredients

2 lbs potatoes, peeled & cut into large chunks

1 lb SweetHeart Lettage® Tender Leaf Cabbage™, shredded

2 shallots, thinly sliced

4 tablespoons butter

1 cup whole milk

Salt and pepper

Directions

Cover potatoes in water in a large pot, add salt and heat to a simmer for about 15 minutes, or until soft. Drain and keep warm. Sautée the cabbage and shallots in 2 tablespoons of butter until soft. Heat milk and remaining butter to simmering in a small pan. Mash the potatoes with half of the milk and butter mixture, adding more as needed to get desired consistency (it may take the entire amount). Stir in shallots and cabbage and season to taste. Serve with more butter for a true Irish taste.

Fried Shallot Rings

Ingredients

shallots, peeled and sliced with knife or mandoline

flour

canola or safflower oil

salt

Directions

Heat one inch of oil in a small skillet over medium heat. Separate the shallot slices into rings and place them in a medium bowl. Sprinkle flour over the shallots and toss lightly to coat them evenly. Working with a small quantity, sprinkle shallots over the oil and stir gently to keep them separated. Fry until golden brown. Remove and place on paper towels to drain. Sprinkle with salt and serve.
