Ingredients

1 pound lean ground beef

1 tablespoon hoisin sauce

1 tablespoon soy sauce

1 tablespoon hot sauce (like Sriracha)

2 Chef’s Selection™ Professional Cooking Shallots, sliced

2 tablespoons fresh ginger, grated

3 cloves garlic, pressed or minced

1 tablespoon canola oil

8 ounces baby portabella mushrooms, sliced

4 heads of baby bok choy (pak choi), or 4 cups of baby spinach leaves

noodles from 4 3-ounce packages of beef flavored ramen noodles

2 beef flavor packets

Directions

1. Combine the ground beef, hoisin sauce, soy sauce, hot sauce, ginger and garlic in a bowl. Heat 1 tablespoon vegetable oil in a large skillet over high heat. Add the shallots and cook until translucent. Add the beef mixture and cook, breaking up the meat, until browned, 5-8 minutes.

2. Add the mushrooms to the skillet. Cook, stirring, 2-4 minutes.

3. Bring 6 cups water to a boil in a large pot over high heat. Add the flavor packets, then add the noodles. Stir to start separating the noodles. Add the bok choy or spinach. The noodles and vegetables will be done when the noodles are tender and the vegetables are wilted, about 3 minutes. Add the beef-mushroom mixture to the pot of noodles and vegetables, and toss to combine. Note: the bok choy or spinach can also be cooked sepatrately in boiling water for 2-3 minutes.
